PRUE’S BERRIES
Berry and Choc Chip Muffins
2 cups self-raising flour
½ cup caster sugar
½ cup chocolate chips
½ tsp salt
100g butter
1 cup milk
1 egg
1 tsp vanilla essence
1 cup mashed berries
With a fork, stir together in a large bowl the flour, caster sugar, chocolate chips and salt. In another bowl, melt the butter, remove from heat, then add milk, egg and vanilla. Beat well. Mash the berries then stir into the liquid. Tip the liquid mixture into bowl of dry ingredients. Fold together until flour is dampened. Spoon into muffin cups and bake at 220C for 12-15 minutes.

Cream
Whip cream to the same consistency as the yoghurt. Stir cream and yoghurt together. Add berries and marshmallows.
Berry Crumble
1kg berries
½ cup brown sugar
1 cup rolled oats
½ cup self-raising flour
½ tsp mixed spice
1/3 cup margarine
Mix sugar, rolled oats, flour and spice. Rub in margarine until mixture is crumbly. Tip berries into a cooking dish. Spread crumb mixture over top. Bake at 180C for 40 minutes (until top is browned)
Berry Jam
1kg berries
1kg sugar
Cook berries slowly until pulpy (you can mash with a potato masher if needed). Bring to a fast boil. Add sugar and stir until boiling. Boil 5 minutes. Remove from heat. Pour jam into sterilised jars and lid. Makes 4-5 jars.
